Baked meatless tacos (with fresh salsa)

Ingredients

  1. 4large Flour Tortillas
  2. 1can Black Beans, drained but not rinsed
  3. 2large cloves Garlic, chopped
  4. 16oz. Ricotta Cheese
  5. 1/3cup grated Parmesan Cheese
  6. For the Salsa
  7. 2large ripe Tomatoes, diced
  8. 1med. Sweet Onion diced
  9. 1large clove Garlic, chopped fine
  10. 2Jalapeño peppers, minced
  11. 1tsp. dried Cilantro
  12. 1tsp. dried Oregano
  13. 1pinch Salt
  14. 1tbs. Lemon juice

Cooking Instructions

    Mix your salsa and refrigerate at least 1 hour.

    Mash the beans with the garlic.

  3. 3

    Mix the cheeses.

  4. 4

    Place 1/4 of beans on half tortilla, top with 1/4 of cheese mix. Spread to edge, fold over. Repeat.

    Place filled tortillas on greased cookie sheet. Bake at 350° for approx. 25 minutes or until slightly browned.

    Serve with salsa.
