A quick dinner fixer upper made with ingredients you can have stocked up in the fridge ahead of time!
Cooking Instructions

Bring salted water in pot to boil, to cook pasta
- 2
On medium heat, brown bacon
- 3
Once bacon is brown and slightly crispy, add shallots
- 4
Saute' shallots til aromatic, add garlic
- 5
Garlic shouldn't take long to aromatise
- 6
Add pasta. Tip: I like to throw the pasta in a little under-cooked, gradually adding pasta cooking water to the pan as it cooks.

Throw spinach over, cover pan and let cook for about 5 minutes on medium heat.

Sprinkle Parmesan and serve!

About a week ago I made a bacon and shrimp pasta with creamy pesto. Not surprisingly, it went over well. I didn't realize just how well, though, until this evening, when my wife pulled out even more shrimp and another package of bacon and asked for an encore.
