Bored with the regular cake i thought of trying this recipe which turned out to be pretty yumm. :-)

Bored with the regular cake i thought of trying this recipe which turned out to be pretty yumm. :-)
Cooking Instructions

Peel off the mangoes and make thin slices out of them of finger size thickness and put it aside

Take a pan and place it over medium heat. Add butter and sugar in tha pan caramalize the sugar. Turn the heat off when sugar turns dark brown in colour. Ensure that there are no crystals in them.

Take a baking tin and lightly cover the base with butter. Pour the caramel in the baking pan so that it completely covers the base. Place the mango slices over caramel layer. Keep it aside to let it cool.

Take another bowl. Whisk egg, flour, sugar, baking powder and essence and mix them well.

Pour the cake mixture in the baking tin that was kept aside with caramel and mango slices

Place the tin in an oven for 45 mins and 140°F celsius.

When done carefully remove the cake from the baking tin and serve it upside down showing the flavorous mango on top of the cake.

When I had first eaten a pineapple upside down cake, I started thinking about a pear upside down cake. I head it couldn’t work because the pear released so much liquid. Years later, I saw something on PBS, they made one from scratch with the addition of corn starch to absorb some of the liquid released by the pears. This is my first attempt at a pear upside down cake and I did it similar to the way I’the make the pineapple version. Don’t shame me for using the boxed cake mix 😏. The cake was actually very balanced and not overly sweet. It wouldn’t be a bad idea to top it with a warm apricot jam or something similar. Karl -
