Ingredients

  1. 1/3 cupcold roast potatoes
  2. 1/4 cupcold roast parsnips
  3. 2eggs
  4. 30 gramsgrated cheddar
  5. 2bacon rashers
  6. 1 dashmilk
  7. 1 pinchsalt
  8. 1 tspbutter

Cooking Instructions

  1. 1

    Place the butter in a frying pan and heat

  2. 2

    While butter melts slice the bacon rashers into small strips and add to pan

  3. 3

    Dice the potatoes and parsnips (into approx. 0.5cm cubes) and add to the pan

  4. 4

    whisk up the eggs with the milk and add to pan

  5. 5

    Keep the pan's contents stirred until cooked through then mix in the cheese and seasoning

  6. 6

    Serve with toast
