Baked Ziti with Veggies

Ingredients

  1. 1 1/3 cupWhole Grain Ziti
  2. 28 ozcanned diced tomatoes, juice reserved
  3. 1 cupdiced carrots
  4. 1 cupdiced green bell pepper
  5. 2 cupchopped broccoli
  6. 1/2 cupsliced mushrooms
  7. 4 clovegarlic, minced
  8. 2 tspbasil
  9. 2 tsporegano
  10. 1/4 tspblack pepper
  11. 1 cupreduced-fat mozerella
  12. 1 cupshredded parmesan

Cooking Instructions

45 mins
  1. 1

    Preheat to 375°F

  2. 2

    Cook pasta to el dente, drain

  3. 3

    Prepare all the veggies (chopping, mincing, etc)

  4. 4

    Saute carrots, peppers and broccoli in reserved tomato juice for 5 minutes

  5. 5

    Add mushrooms and garlic for another 5 min.

  6. 6

    Add tomatoes and spices for 3 min.

  7. 7

    In large bowl toss pasta, veggies and mozerella together.

  8. 8

    Place in sprayed 9 x 13 pan

  9. 9

    Sprinkle with the parmesean and cover with foil

  10. 10

    Bake 20 min.

  11. 11

    Remove foil and bake another 10 min.
