Cooking Instructions

Heat tomato-meat sauce in a seperate sauce pot to a simmer.

Boil noodles in salted water until al dente. Drain.

In a large mixing bowl, combine cooked noodles, 1 C mozzarella, tomatoes, pepper flakes, roasted bell peppers, spinach, parsley, and basil. Add a pinch of salt. Mix together. Transfer to a large casserole dish. Sprinkle remaining cheese atop.

Bake uncovered at 350° for approximately 15- 20 minutes or until cheese is bubbly.

This is one of my families favorite meals. It seems like a lot of steps, but it all comes together fairly easily. I've tweaked this recipe from what I originally posted, because of changing up the way we eat, but it's still a fairly uncomplicated, from scratch recipe. This recipe makes alot, so you could cut the recipe in half for a smaller serving size...we usually just make the big batch so we have leftovers to snack on or have for lunch in upcoming days.
