You could add burghul (cracked wheat) instead of quinoa you need to wash and soak for half hour .
You play with the dressing too you could add more oil and lemon as you desire.

Ingredients

4 people
  1. 1/2 cupquinoa cook
  2. 4 bunchparsley chopped fine
  3. 2tomatoes diced
  4. 2 bunchgreen onions chopped
  5. 1/4 cupdry mint
  6. 1large cucumber peeled and chopped
  7. 2 tablespoonsextra Virgin olive oil
  8. Juice of 2 lemons
  9. 1 tbspsalt
  10. 1/2 tsppepper

Cooking Instructions

30 minutes

    Add all chopped vegetables and mix will

    Make the dressing, oil lemon juice and salt and pepper

    Add the dressing to the quinoa let it soak for an hour in cooler

    After hour add the chopped vegetables
