A dear friend of mine gave me this recipe. I love fall and nothing says fall like creamy, warm, fragrent soup. This is sure to hit the spot on a cold or rainy day. So fresh and flavorful.

Ingredients

  1. 2acorn squash
  2. 5 clovegarlic
  3. 1onion, chopped
  4. salt/pepper
  5. 8 cupchicken broth or stock
  6. 1 tspground cinnamon
  7. 1 tbsplemon juice
  8. 1/4 cupto 1/2 cup heavy cream or half n half

Cooking Instructions

    Preheat oven to 400

    Cut squash equator side up and remove seeds and membranes

  3. 3

    Face up on baking sheet, brush with olive oil and sprinkle with salt and pepper. Bake for 60 min

    Halfway through, saute garlic and chopped onion until garlic is slightly brown and onion translucent.

    Add broth and bring to a boil over med.

    Add cinnamon

    When squash is done scoop out and add to broth. Let boil for about 15 more min. Hbbstbqbenntfhnn

    Put in a blender or use a hand blender. Blend to the consistency you prefer. Add lemon juice, cream and enjoy.wbenknnjdu
