Nacho Dip with Bacon and Melted Manchego Cheese

I wasn't very hungry, just felt like snacking on something. I opened the fridge and saw some bacon strips for cooking, and an idea sparked. I also had a bag of chips, but then I saw the nachos and changed my mind. I preferred them over the chips, and they turned out to be really delicious! I recommend them for dipping.
Invented by Ignacio “Nacho” Alaya in 1943, we can start considering nachos as those tortilla chips covered with cheese, although they usually have more ingredients.
The original recipe consists of tortilla chips covered with melted cheese and pickled jalapeño slices. In fact, some brands market this type of chili under the name nachos.
Totopos are the genuine product, a Mexican creation that originated in Aztec culture. Originally, they were made with nixtamalized corn dough, similar to the traditional preparation of tortillas. Nowadays, they are usually made from corn tortillas, which are cut into triangles and fried until crispy, and we call them Nachos.

Melt a tablespoon of butter in a pan.

I chose the bag of nachos I had, not spicy, maybe they would have been tastier.

I spread them on a plate, just enough for two.

Once the butter is melted, add the bacon, stir to coat it all over, and let it cook.

Add a splash of brandy, it will help them brown.

Once done, remove them from the pan.

Spread them over the nachos.

Empty the container of cheese evenly over them.

Place the plate in the microwave for one minute on high. When you take it out, the cheese will have melted, and you can start dipping. Eat with your hands, grabbing nachos and coating them with bacon and cheese. It's messy, but delicious!
