This was my first attempt at home-made salsa. I made this about two weeks ago with fresh peppers from the garden. Most of these quantities are after the fact approximations; at the time I was just using whatever I had on hand without measuring most of it.
Cooking Instructions

Combine crushed tomatoes and hot peppers in a blender

Combine all the ingredients in a large pot

Bring to a boil

Reduce heat and simmer until slightly thickened, stirring occasionally

Remove from heat and fill jars and/or serve

I suppose it would be easier to put the tomatoes, bell pepper, etc. to a food processor and pulse for a few seconds. But since I don't have one, I have to do it the old-fashioned way--slice and dice them manually! I call this quick salsa because I just slice and dice vegetables that I found in my fridge. If you only have tomatoes and onions, that would work, too.

Salsa was very delicious! We doubled the recipe, and added a few Tbl of lime juice. The jalapeño was too spicy so we added 6-7 extra tomatillos. Next time I would just cut the amount of jalapeño in half.

Spicy and sweet salsa. I was going to add shrimp and avocados, but it was too spicy for me. So I left out the shrimp and avocados in this batch. My aunt made a similar recipe, the recipe she made called for mango, cilantro, agave, and lime juice. But I compromised by using a banana, honey, and lemon juice. Just only add, how much jalapeno you can handle and it'll be perfect.

mild salsa
i finally perfected my salsa. i call this one mild since my hot salsa has ghost pepper in it. using fresh jalapeños makes this salsa very refreshing.

I have granddaughters and I just want them to enjoy the same foods as everyone else. Just because it is a certain type of food, doesn't mean it has to have someone left out. I left out the heat. When I was growing up sometimes someone would not like what we were having. So my Mom would cook something extra but different than what everyone was eating. So I had one daughter not liking potatoes, unless French fries, so I cooked her rice. My other daughter didn't like eggs so I cooked different for her. Well I made this a mild version.
