🍄 Mushroom and Caramelized Onion Soup

Ingredients

45-60 minutes
2-3 servings
  1. For the stock
  2. 3 cupswater
  3. 1carrot 🥕, peeled and cut in half
  4. 3quarters of an onion
  5. 2 clovesgarlic
  6. 1 tablespoontomato paste, or ketchup would work as well
  7. to tasteSalt
  8. For the soup
  9. Some oil for sauteing
  10. 1quarter of an onion, thinly sliced
  11. Pinchsugar
  12. 3sliced mushrooms 🍄
  13. 1 clovegarlic, minced
  14. 1quarter cup of soy sauce
  15. 1 bunchgreen onions, sliced
  16. to tasteSalt and pepper

Cooking Instructions

45-60 minutes
  1. 1

    Bring water and stock ingredients to a boil. Lower the heat, and simmer for 30-45 minutes

    Strain the stock and set aside

  3. 3

    Heat some oil and caramelize thinly sliced onions with a pinch of sugar

  4. 4

    Once the onions are caramelized, add mushrooms and some salt and cook until softened

  5. 5

    Add soy sauce and stock to veggies and simmer until the soup is heated through

  6. 6

    Add green onions

  7. 7

    Season with salt and pepper to taste
