Ingredients

  1. 1 tbspOlive Oil
  2. 2 tbspbutter
  3. 6Vidalia onions thinly sliced
  4. 1salt and pepper
  5. 2 tspfresh thyme
  6. 1bay leaf
  7. 1/2 cupdry sherry
  8. 6 cupbeef stock
  9. 6 slicetoasted, thickly sliced and lightly toasted
  10. 2 cupMozzarella cheese to your liking (1-)

Cooking Instructions

  1. 1

    Heat butter and oil over medium heat. Add onions, season with salt, pepper and thyme. Cook onions until tender, sweet and caramel colored.

    Add sherry, bay leaf and deglaze. Add beef stock, cover and bring to a boil. Arrange ovenproof bowls on a baking sheet. Preheat broiler. Ladle soup into bowls, float toasted bread on soup and cover with mozzarella . Broil until cheese melts and is bubbly and lightly browned.
