Flatbread with egg and mango chutney

Ingredients

  1. 2eggs
  2. 50 gself raising flour
  3. 3 tblsnatural yoghurt
  4. 1 tblsmango chutney
  5. 1/2fresh red chilli sliced
  6. Evoo, s+p

Cooking Instructions

    Vigourously boil water. Poach eggs for 2-3 mins. Drain.

    Fry pan on medium. Add flour to pinch salt in bowl, with 2 tbls yoghurt and 1/2 tbls Evoo. Mix to doug then roll out to 1/2cm thick and dry fry to brown - about 3 mins

  3. 3

    Dot remaining yoghurt and mango chutney around bread. Add halved eggs, scatter over chilli, drizzle with Evoo and season from a height

I'm vegetarian & allergic to eggs, but my wife eats meat. I prepare all meals, often converting meat recipes in to vegetarian ones. Many of my recipes show measurements for both meat and vegetarian versions, often for the same meal... simply cooking a common sauce in one pan then using seperate pans for meat and veg to combine with sauce when served
