Ingredients

  1. 1whole cauliflower, cut into bite size pieces
  2. 1 cupheavy cream
  3. 5 ouncebox of borsin garlic and herb cream cheese
  4. 1 cupshredded sharp cheddar cheese
  5. 1 cupshredded emmental cheese
  6. 1/4 cupfresh grated romano cheese
  7. 1 teaspoondijon mustard
  8. 1 teaspoonfresh lemon juice
  9. 1 teaspoonhot sauce, such as franks red hot
  10. 1/4 teaspoonpepper and salt to taste
  11. 2 tablespoonchopped chives
  12. 2 tablespoonchopped parsley
  13. 3 slicesbacon, cookeded crisp and broken into pieces

Cooking Instructions

    Preheat the oven to 375. Spray a baking dish large enough to hold cauliflower with plenty of room for the sauce with non stick spray

    Pre cook cauliflower in either chicken broth or salted water for 3 minutes, drain well

  3. 3

    Heat cream in a saucepan, add borsin cheese, dijon, lemon, hot sauce and pepper stir until mixture is smooth

    Combine cheddar, romano and emmantal cheese in a bowl

  5. 5

    Add half of cheese blend to sauce, off heat, and stir in with chives and parsley

  6. 6

    Combine sauce with cauliflower and add to prepared pan

  7. 7

    Top with remaining cheese

  8. 8

    Add crispy cooked bacon

  9. 9

    Bake until hot and cheese is melted about 15 to 20 minutes

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
