Miso soup has been the start to all of my great Japanese meals. And it’s so easy to make. The Ramen makes it more of a meal and using vegetable broth also makes it vegan...for those of you who swing that way. 😉 #mycookbook

Miso Soup with Ramen Noodles

Miso soup has been the start to all of my great Japanese meals. And it’s so easy to make. The Ramen makes it more of a meal and using vegetable broth also makes it vegan...for those of you who swing that way. 😉 #mycookbook

Ingredients

20 mins
  1. 2 cupsVegetable Broth
  2. 1 packageRamen Noodles (doesn’t matter what flavor because you’ll throw out the flavor pack anyway)
  3. 1/2 sheetSushi Nori (roasted seaweed), chopped
  4. 1/2 cupfirm tofu, small cubes
  5. 1/4 cupmiso paste
  6. 1 tbsgreen onion, finely chopped
  7. to tastePepper

Cooking Instructions

    Place the chopped seaweed in a small bowl with 1/2 cup water. Set aside.

    In a sauce pan, bring the broth to a boil and add the Ramen noodles cooking for 3 minutes. Break apart as they boil.

    Reduce heat to medium-low and add the seaweed as well as the soaking liquid (water) and the tofu.

  4. 4

    In a bowl, measure the miso paste and carefully add 1/2 cup of the hot broth. Whisk together until smooth. Add the miso mixture into the broth and mix well.

    Spoon into a bowl and add chopped green onion and enjoy!!
