Miso soup has been the start to all of my great Japanese meals. And it’s so easy to make. The Ramen makes it more of a meal and using vegetable broth also makes it vegan...for those of you who swing that way. 😉 #mycookbook

Cooking Instructions

Place the chopped seaweed in a small bowl with 1/2 cup water. Set aside.

In a sauce pan, bring the broth to a boil and add the Ramen noodles cooking for 3 minutes. Break apart as they boil.

Reduce heat to medium-low and add the seaweed as well as the soaking liquid (water) and the tofu.

In a bowl, measure the miso paste and carefully add 1/2 cup of the hot broth. Whisk together until smooth. Add the miso mixture into the broth and mix well.

Spoon into a bowl and add chopped green onion and enjoy!!

I love ramen and udon noodles, but here in the U.S. it's hard to get good fresh noodles, and since I'm trying to have a baby, instant noodles are a no-no... so I made this simple miso ramen soup.I buy dashi stock granules and blended miso at Mitsuwa, a Japanese supermarket chain in the U.S. Garlic burns easily, so saute over low heat.
