In a pan add enough oil,then add in little onion,stir fry till soft,add in scotch bonnet,seasonings,mint leaves nd stir add in fried chicken stir fry for 4 mins then sprinkle thyme,sprinkle again chicken stock nd cover,after 1 mins open nd add the remaining diced onion,turn off heat nd cover with lid to allow the onion get cooked by steam.serve and enjoy.
