Rice Flour Coconut Cookies Rice Flour Coconut Cookies
I was craving for something that has coconut flavor in the middle of the night. I had only the four ingredients in my apartment, so I decided to try baking this coconut cookies using rice flour instead of the all-purpose flour to see the difference. The cookies turned out awesome. It has rich flavor. If you don't want it to be mushy in the middle, you can reduce the amount of margarine to only half of 1/4 cup. Also, 2 tablespoons of powdered would be just fine, too. Try it! It's really yummy. It goes well with a cup of coffee or green tea. And oh, much better if you run after consuming it, too. ;) Sautta S.S. -

Cultured Coconut Cream Cultured Coconut Cream
This is a substitute and alternative to cream cheese. Depending on what you add to it you can make it into yogurt, icing, whipped cream, or use it as a filling. The base tastes like cream cheese with a touch of sweetness, complimented with coconut, when cultured for 36 hours. When cultured for a while longer it is much more tangy/sharper.With fall and winter holidays coming up I will post more/better quality cooksnaps of it being used as a filling or as icing on some of my favorite seasonal foods/snacks.Karazie

Vegan Pineapple Ripple Ice Cream Vegan Pineapple Ripple Ice Cream
I got the idea for this ice cream from Gemma Stafford of Bigger Bolder Baking on YouTube. You can also use homemade coconut milk. The measurement is the milk from 3 large coconuts. Pour the coconut milk in cups, cover and leave in the fridge for about 2 days. The cream would have seperated from the water, spoon the cream from the top and refrigerate the cream overnight then it is ready to use. Ellen_A3 -

Simmered and Chilled Winter Melon for Summertime Simmered and Chilled Winter Melon for Summertime
In my family, it was natural to eat winter melon chilled.Because the size for winter melons varies, adjust the amount of seasonings accordingly. Taste the broth and season it as if you're making a properly-seasoned clear soup. You could add mirin if you'd like.Even if you don't simmer this for a long time, the flavor will soak into the melon if it is chilled. For 4 servings. Recipe by Shampoo hat cookpad.japan -

I'm on a low carb diet, but I'm not willing to sacrifice all carbs, so I picked up a bag of coconut flour, and made myself some flatbread. This can be easily modified for sweet, as well as any savory flavor you're in the mood for. It is quick, easy, and satisfying. Christi -
