Slow Cooker Orange Chicken

I used to make this on the stovetop all of the time. I liked it, but it was too, too sweet at times.

Taking a chance, I took my recipe for slow cooker General Tso's chicken, switched out the hoisin sauce and used orange marmalade instead.

It is perfect. The curry powder offsets the sweetness and makes a nice balance. I also use aminos acid, instead of soy sauce. It is so much better. Nicer flavor.

You can coat the crock pot with oil, but you really should use a liner. It gets very sticky.

Ingredients

4-6 servings
  1. 1.5-2 lbsBoneless, Skinless Chicken Thighs/Breasts
  2. 1/4 CupCornstarch
  3. 1 tbspCurry Powder
  4. 1/4 tspGround Red(Cayenne) Pepper
  5. 2 tbspCoconut Oil
  6. 1-2 cupsPeppers, chopped up
  7. 1-2 cupschopped carrots
  8. 1 cupOrange Marmalade
  9. 2 tbspAminos Acid/Soy sauce
  10. 1/4 CupRice Wine Vinegar
  11. 1 tbspSesame Oil
  12. 1 tspGround Ginger
  13. 1-2 ClovesGarlic, minced
  14. 1-2 CupBroccoli, or more if you like

Cooking Instructions

    Dice the chicken up into 1 inch pieces. Place the chicken into a medium bowl.

    Add the corn starch, curry powder and cayenne pepper onto the chicken, then mix until evenly coated. Personally, I use my hands to mix it together.

    Heat a large pan or wok over medium heat, coat with the coconut oil, then added the chicken. Heat each side for about 5 minutes, until the pink is gone. Place the chicken into the slow cooker, along with the carrots and peppers. Mix the peppers into the pot. ***Please use a slow cooker liner***

    In a small bowl, add the orange marmalade, aminos acid, rice wine vinegar, ground ginger, sesame oil, and minced garlic. Stir to mix. Pour onto the chicken in the slow cooker. Close the lid, set the temperature to low, and the timer to 2 hours.

    After 2 hours, add the broccoli to the slow cooker. Stir it, then put the cover back onto the slow cooker. Once again, set the temperature to low and the timer to 30 minutes.

Since I was a kid, I remember sitting in the kitchen to watch and/or help my parents. As I grew up, I decided to try their recipes and experiment with different recipes. Some were very good and I re-make them all of the time. Others? Yeah, I never tried them again. All of the recipes that I post are the very good ones.Also, while growing up, my pops suffered from high blood pressure, so my mom stopped adding sodium. Since that is how I was raised, all of the dishes that I post do not have any extra sodium added to it. A lot of friends and family who try my recipes, either do not notice nor miss it. But in no way am I saying not to add salt if you use my recipes. If you want to add it, then go for it.In closing, I hope that you enjoy my recipes. If you use any, then please post pictures. Enjoy!
