Cooking Instructions

Wash rice very well and Soak it for 3-4hours

Drain rice and cook about a cup of rice and when it’s soft and done mix it with the already soaked rice

Blend the rice until smooth and then add yeast place in a hot area and allow to rise

When the mixture has risen check consistency (it’s usually watery, hence adjust the mixture ie should be as thick as pap) add sugar to taste and onions and fry on medium heat adding little oil to the pan as you fry, and turning it once one side has browned

For the taushe(vegetable soup) Cook beef with ingredients (thyme curry, onions and seasoning) and set aside

Cook pumpkin until soft, when it’s no longer hot, blend it until smooth and set aside

Heat red oil on medium heat add onions, ginger,blended tomato and fry well
- 8
When the mixture is well fried and oil has risen a little bit above it depending on the quantity used. Add the beef and the beef broth and allow to boil

Then add the blended pumpkin you’ll notice the soup thicken, add seasoning and allow it to simmer for a while

Add chopped spinach and cover for a few minutes.

Note: for the meat you can use beef chicken and even brisket bone(usally a plus for taushe) or offal to make your soup tastier

Being a Taiwanese person abroad, you often miss perhaps one of the most famous dishes in Taiwan--Beef Noodle Soup. While I was living in smaller communities abroad (like London, Ontario and Aachen, Germany), I often had really bad cravings for beef noodles so I searched high and low for an easy but delicious recipe of the popular dish. This recipe comes from a famous Taiwanese chef Meixian Lee (李梅仙). Even though I live in a much bigger city (Toronto) now and have access to lots of Taiwanese restaurants, I rarely find myself needing to go to them for beef noodle soup as this recipe is as good as it gets!Most of the ingredients here can be bought at your local Chinese grocer and are sometimes available in the international aisle at your regular grocer.
