Ingredients

  1. For Cake:
  2. Dry ingredients:
  3. 2 cupsAll Purpose Flour
  4. 1/2 cupLight Brown Sugar
  5. 1/2 TeaspoonFine Salt
  6. 1/2 TeaspoonBaking Soda
  7. 1 TeaspoonBaking Powder
  8. Wet Ingredients:
  9. 8 ouncessour cream
  10. 1/2 cupPure Maple Syrup
  11. 1/2 cupoil ( canola, vegetable or melted coconut oil
  12. 1/4 cupbuttermilk or whole milk
  13. 2large eggs beaten
  14. 1 teaspoonmaple extract (optional. Makes it more maple flavor)
  15. 1/2 cupsChopped toasted walnuts
  16. Strudel Mixture;
  17. 1/2 cuplight brown sugar
  18. 1/4 cupall purpose flour
  19. 1/4 cupschopped toasted walnuts
  20. 1/2 teaspooncinnamon or nutmeg. I use both
  21. 3 tablespoonsunsalted butter, melted
  22. Topping:
  23. 1/2 cupsifted powdered sugar
  24. 2 Tablespoonsmaple syrup
  25. Canadd 1 teaspoon maple extract for more intense maple flavor

Cooking Instructions

    Preheat oven to 350. While oven preheats, spray or butter a 9x9 inch square pan or cast iron or aluminum.

    Mix strudel ingredients until crumbly and set aside.

  3. 3

    In large bowl, mix dry ingredients for cake until well combined. Set aside.

  4. 4

    In separate bowl, mix wet ingredients until well combined.

  5. 5

    Make a well in the center of dry ingredients.

  6. 6

    Pour wet ingredients into well and gently fold into dry until just combined. Do not over mix.

  7. 7

    Pour half of the cake batter into prepared pan.

  8. 8

    Sprinkle half the strudel mixture over layer of cake in pan.

    Pour remaining batter over strudel layer.

  10. 10

    Sprinkle remaining strudel over top.

  11. 11

    Bake at 350 until toothpick inserted comes out clean. Check after 20 minutes.

    Cool for 15 minutes if removing from pan and finish cooling on wire rack.

    Mix topping ingredients to combine well. I sometimes add a few splashes of milk to thin for a glaze. You can make it thick if you prefer.

    Drizzle icing over warm cake.

    Serve warm if you prefer. Even better the next day.

    I love this for breakfast or snack with coffee or tea.
