This is a variation of a Mexican recipe. Enjoy it with some Aperitif, salad, chili con carne, tortillas, rice, and more. It's one of my family's standard dishes.Just mix all the ingredients together and chill it in the refrigerator. Be sure to use a ripe avocado. Adding lime will give it a lovely scent. I love chipotle and if I can make some of there signature dishes at home, I'm all for it. I found their recipe and tweaked it for my liking. Not that theirs needed to be changed but to make it more my own. I hope you like my version.

My spin, not much different then most We don't like Cilantro so just added a bit of dried.

This dish was inspired from my sister's neighbor next door from Guadalajara. My sister owns three avocado trees. Her next door neighbor, Mrs Castillo always makes unique dishes from her country. I thought it would be a great gesture for me to make her guacamole with a twist, She loved it. The bacon gives it a nice crispy texture and slightly salty beautiful flavor.
