Ingredients

  1. 4-6large ears of fresh corn
  2. 1/2 cupsalad oil
  3. 1/4 cupcider vinegar
  4. 2 tspfresh lemon juice
  5. 3 tbspparsley
  6. 2 tspsalt
  7. 1 tspsugar
  8. 1/2 tspbasil
  9. 1/4 tspred ground pepper
  10. 1red pepper (chopped)
  11. 1green pepper (chopped)
  12. 1/2 cupchopped green onions

Cooking Instructions

    Cook corn-- put ears in boiling water, return to boiling -- boil 2 minutes. Remove from heat for 5 minutes-- rinse in cold water to prevent more cooking.

    Combine oil, vinegar, lemon juice, parsley, salt, sugar, basil & red pepper -- whisk vigorously!

    Cut corn from ears -- put in mixture -- add peppers & onions. Mix well.

    Cover & chill overnight.
