Place the ginger, sugar, allspice, thyme, cayenne pepper, apple sauce, lime juice, garlic, the salt and black pepper, and chop up small some of the peppers into a bowl and mix together with the minced chicken.

If mincing the chicken yourself, chop 3 chicken breasts small then mince in a blender.

Place a griddle pan or under a grill. Heat and add veg oil, spray oil if under the grill

Add the sweet peppers and grill or griddle them with the burgers and cook for a further 5 minutes turning frequently until peppers are blackened.

Add them hot to a bowl and cover with Cling film and let steam for 5 minutes. And pop back on the grill for when you want them. 3 mins each side.

The grilled sweet peppers mix in a bowl together with lettuce and add to the top of the burger on the bun.

Place the burgers in the buns with lettuce and sliced tomatoes and a nice fruity spiced sauce. Serve while hot.
