My Super Tasty Peppered Fish

Cut fish about 3-4 pieces, wash and pour boiled water on it to remove the slimy substance.Rinse very well and transfer into a bowl. Grind oregano,black pepper, thyme,cumin,salt,onion powder with motar.Mix lemon juice and grinded herbs and coat the fish. Cover and place it in a cool place to marinate for at least 30 or 1hr.

While fish is marinating slice onion into ring,partially grind scotch bonnet and then red pepper and sweet pepper should be sliced,on a low heat,heat up 3tsp of oil and saute onions pour grinded scotch bonnet and stir fry for just 2mins.Add sliced red bell pepper keep stirring for 2mins again. Take sauce off fire.

After the marinade,heat oil and deep fry both sides for at least 5mins until brown. After fried mix fish in that fried epic sauce and let it sizzle,mix gently to avoid breakage of the fish. Serve with jollop rice,spa,or with chilled drink.
