Peel, slices and wash the potatoes and add a little salt

Place frying pan on fire pour in oil

When the oil is heated add a few potatoes slice

Fry on medium heat

When it's all fried set aside

In a small bowl, beat the eggs, add seasoning, onions and curry powder

Heat your frying pan for a seconds then add 1\2 of tbs of oil

Allow to heat for 30 seconds, pour the egg mixture and allow to fry for a minutes

Boil your meat with garlic, ginger, onions, Seasoning and salt

When it's boiled fry and set aside

Blend your peppers, scotch bonnet and onions

In another pot add the vegetable oil place on medium heat

When it's hot add 1 chopped onions fry the onions for 3minutes

Add the blended peppers and fry for 5minutes

Add the fried meat, seasoning, garlic and pinch of salt

Turn the heat down to low and continue to fry for some minutes

My Curried Fish and Chips My Curried Fish and Chips
I made this a few weeks ago, and the family loved it. You have to be careful frying the fish as not to break it up too much. I used a mild Curry, but with the fish, fish sauce and lemon juice its a lovely tangy tasty Curry. Maureen 😀
