Break and remove coconut flesh from shell

Rinse, then slice and dice

Pour the water in a pot and add the sugar

Allow to heatup a bit then pour in the diced coconut

Stir and leave to boil and caramelize but stir frequently to prevent burn

When it’s dried of the sugar syrup, pour in a tray and leave to cool completely then break in pieces as desired
