Roti/Phulka

Simple roti or Phulka is a plain bread made of different types of flour which we make with our gravy dishes. Phulka is a medium size bread which literally fluffs and is very light. One can eat 2 Phulka easily in lunch as they are light and smaller.
For best fluffy bread you have to knead it for 5 mins and give it a rest of 1 hour at least.
My mom never adds salt or oil while kneading the dough.

Cooking Instructions

In a big mixing bowl knead the dough and cover it with cling or kitchen towel. Refrigerate for at least an hour.

Make small balls (paira) and with fingers and palm of your hand pinch the sides and make small discs. (chunn lein) Use as less dry flour as you can, to make soft phulka.

Now use rolling pin and flatten the discs and make round medium discs (again use as less dry flour as you can)

Heat the tawa on medium low flame. Flip the bread twice on your palms and put it on the tawa. Keep the flame on medium high.

Let the colour change and a few bubbles appear, about 1 minute and flip it.

Now after 30 seconds rotate the bread on tawa and then keep it direct on flame to fluff.

Flip and keep the other side on direct flame for 10 sec. Remove it and keep in a kitchen cloth to keep it soft and hot.

Serve with any gravy dish and enjoy.

But by adding more water, kneading the dough well, and letting it rest, I was able to make tender and delicious ones.The amount of water indicated is a guideline only.
