Pancakes are of huge variety around the world.. These breakfast pancakes are the American version I guess so..
Pancakes are my favourite breakfast. 🥞 Topped with fresh seasonal fruits, served with Nutella and cream. I personally don’t like honey with pancakes but my husband likes it..
I also like to have some nuts and ofcourse coffee ☕️ goes perfect without any reason 👌😛
Sometimes I really love to have special breakfast, more than that, I really love serving it to my husband!! So this was just one of those special breakfast, more to come yet!
Tip: The more rest time you can give, the more thick and fluffy they turn out.. I usually prepare the batter and refrigerate it overnight. This time I just gave an hour’s rest which really didn’t satisfy me!!

Ingredients

Prep time: 10 Cook time: 10-15 mins
2 person
  1. For pancake batter:
  2. 1 cupsifted all-purpose flour
  3. 2 tbspbrown sugar (powdered)
  4. Pinchsalt
  5. 3/4 cupmilk + 2 tbsp to mix later
  6. 2 tspbaking powder
  7. 1 tspvanilla essence (optional)
  8. 1egg
  9. 2 tbspoil or melted butter
  10. 2-3 tbspbutter for cooking
  11. For topping:
  12. Some seasonal fruits (kiwi, banana)
  13. Nutella
  14. Dry fruits
  15. For cappuccino:

Cooking Instructions

Prep time: 10 Cook time: 10-15 mins

    In a big mixing bowl add all the ingredients for pancake and mix well. Keep aside at least for 15 mins. (refrigerate for 1 hour or overnight for best results)

    In a non-stick pan add 1/2 tsp butter and spread evenly. Pour a ladle and half and cook on medium flame.

    When buubles appear, add 1/2 tsp butter on the top and flip gently to cook the other side.

    Remove after 2-3 mins. Repeat with the others. Makes 4-5 pancakes. Then stack them in your serving plate and top as you like.

    Serve with coffee, Nutella, cream, fruits, nuts, anything you like!
