Cooking Instructions

Fill pot with stock over medium heat. Add spices, ketchup, and vinegar, soya sauce. Bring it to a boil.

Add carrots, cabbage, corn, and shredded chicken. Cook for 7-10 minutes. Till the veggies and chicken are warmed through.

Make slurry. Add to soup while stirring constantly. Do this over medium flame till soup thickens.

Whisk the eggs in a separate bowl. Add to soup and stir immediately so that egg ribbons are formed. Turn the flame to low. Adding egg also thickens the soup.

Serve hot immediately, with assorted accompaniments of your choice. Enjoy!

I made this soup with the cooking liquid from "Moist Boiled Chicken".Since my family does not like sour food, the amount of vinegar may be subtle. Dealer's choice!I swear, my students literally ran happily amuck knowing they were not only making, but delivering and serving their very own piping hot finished soups to two of our largest Albuquerque homeless shelters early this morning! As usual, they were all so stinkin' enthusiastic and excited! Kids huh?! 😉 God love em'!Anywho, my students would eventually decide upon various traditional homemade soups. Mostly stews and chicken noodle. Or, dumpling dishes. Always a great idea. But, one of my 7 year old students decided to get their Asian on and go altogether Ninja rogue on their asses last night! This specific soup was initially created out of absolute necessity. Early on, it consisted ONLY of older Chinese kitchen table scraps. And, not the good kind either folks!
