Fluffy Chewy Soft Bread

I created this recipe because I wanted to make very light and chewy bread.
I think this bread is softer than baby's bum!
This recipe is too easy so there are no special tips, but please handle the bread gently since freshly baked ones are very tender.
If you are eating these the day after they're baked, microwave them and they'll become light and fluffy again! Recipe by *koro mama *

Cooking Instructions
- 1
Put all the ingredients in a bread machine, and turn on the "bread dough course"
- 2
When it's done, take out the dough, shape into balls, and punch down to let the air out. Divide into 16 pieces. (I use a knife for that.)
- 3
Line a baking sheet with parchment paper. Reshape the dough and arrange them on the baking sheet so that they don't touch each other.
- 4
Cover with a tightly wrung out kitchen towel, and let it sit for 15 minutes.
- 5
Gently press down in the middle of each roll with the back of a knife to make a line. Put in the oven for 30 minutes at 40℃ for the second rising.
- 6
Preheat the oven to 170℃. In the meantime, dust the tops evenly with cake flour using a tea strainer.
- 7
When the oven has heated up, turn down the temperature to 160℃, and bake for 17 minutes to finish.

Chewy and Fluffy Steamed Bread Chewy and Fluffy Steamed Bread
I used to make carrot steamed bread as baby food for my eldest daughter when she was young. I was using pancake mix everyday but now I use cake flour to save money. The photo shows the ones with soy milk and brown sugar. In Step 4, make sure the kitchen towel (to prevent water dripping onto the bread) is tightly wrung or it will touch the bread. For those using a gas range, pay extra attention. If you are using shallow ramekins, I suggest using a steamer rack (available at 100 yen shops). Using ramekins works best and helps the bread to expand fully.I made them less sweet so adjust to taste. It would be great if you could let me what way you decide to make these. Fluffy Bread Dough Fluffy Bread Dough
I bought a ton of extra-strong bread flour. However, using a lot of it at once is kind of a waste, so I blended the strong flour and cake flour to make my own, and made the dough with it. This dough is suitable for either sweet bread or savory bread. If you don't have extra-strong bread flour, use 240 g of bread flour and 60g of cake flour.Adjust the heat of the milk based on the season, and adjust the amount of milk as well based on the season and how floury the dough is.This dough is very easy to make.It won't get hard the next day and will still be delicious. All you need to do to recreate the freshly baked fluffiness is just heat it up in a 500w microwave for 20 seconds.
