This carrot salad has been a my daughters favorite since they were little.
The boiled eggs mask the flavor of the carrots. Good for those who don't like raw carrots.

Add more salt and pepper at Step 6 if needed.

Ingredients

3 servings
  1. 1Carrot
  2. 2Boiled eggs
  3. 2 tsp❖Whole grain mustard
  4. 3 tbsp❖Mayonnaise
  5. 2 tsp❖Lemon juice
  6. 1 dash❖Salt and pepper
  7. 1/2 tsp❖Sugar
  8. 1dash, optional Black pepper, parsley for garnish

Cooking Instructions

    The ingredients are only 1 carrot and 2 hard boiled eggs.

    Peel the carrot, dip in water and wrap with plastic wrap. Cook in a microwave for about 3~4 minutes until softened.

    Combine the ❖ ingredients in a bowl.

  4. 4

    Mix well until thickened.

  5. 5

    Cut the carrot into 1 cm half-moons. Cut eggs into 8.

  6. 6

    Add carrot and eggs in a ball from Step 4. Mix well.

  7. 7

    Serve and sprinkle black pepper and parsley to your liking.
