Fennel & Chilli Veg Bake

Lovely seasonal veg from our #seasonsupply delivery, roasted low and slow until tender. One of my favourite ways to cook veg as it means I can prep it and put it in the oven then sort the children out and have a cuppa before dinner!

Lovely seasonal veg from our #seasonsupply delivery, roasted low and slow until tender. One of my favourite ways to cook veg as it means I can prep it and put it in the oven then sort the children out and have a cuppa before dinner!
Cooking Instructions

Cut the fronds, base and outer leaves from the fennel. Quarter and put in a baking dish.

Add all the rest of the veg
- 3
Leave the tops on the chillies but slice the rest in half, add to the dish.

Pour the sauce over the veg, season generously with salt and pepper.
- 5
Cover with foil and roast in the oven at 175C for 1 1/2 hours.

LEFTOVERS!! My mom made a point to me the other day. She said ‘sherry, your shining moments are with your leftovers’ lol this time it was the leftovers AND veg that needed to be used before it went south. I tried it a little differently this time trying to get that really good charred taste you get from the Mongolian fry guy. This was not disappointing at all. ☺️I think the key things were having my ingredients prepped and ready, the iron skillet and the high heat.
