Shaved Fennel Salad

So easy and light summer dish. Low carb too.

Ingredients

20 minutes
2 servings
  1. 2bulbs fennel
  2. 1-2 tbspextra virgin olive oil
  3. Juice and zest of 1/2 lemon
  4. 1shallot
  5. 1/4 tspsea salt
  6. 2-3 tbspfresh parsley, chopped
  7. 3-4 tbspshaved parmesan cheese

Cooking Instructions

20 minutes
  1. 1

    Wash and trim fennel bulbs, reserving fronds.

  2. 2

    Shave fennel thin on a mandolin. Shave shallot thin.

  3. 3

    Place in a bowl and toss with other ingredients.

  4. 4

    You may add olives or capers if desired.

Lynn, that sounds delicious! I make a fennel slaw with chopped apple, orange segments, and a vinaigrette made with the orange juice, a little sherry vinegar, a dab of Dijon mustard, and good, fruity olive oil. Your savory version is one I'll have to try.
