Roasted broccoli and carrot soup

One of our all time favourites. It is the perfect dinner option for the cold, wet evenings of UK, and honestly it doesn't take that long to prepare either.

Cooking Instructions
- 1
Put the chopped carrots, onion, and broccoli florets in a bowl, oil, salt and black pepper, and give it a good shake.
- 2
Preheat the oven. Now put the veggies on the baking tray for about 25 minutes at 180 C.
- 3
Boil 3 cups of water in a pot, add the roasted veggies in it, simmer the stove and let it boil for about 15 minutes.
- 4
Let it cool. Keep a tablespoonful of roasted veggies from the boiled pot aside and give the rest a good blend with a blender.
- 5
Let the blended soup cook for 5 minutes at sim. Add the saved veggies in it now for some texture in the soup. Top with some butter while serving.

This soup has little to it and doesn't take a ton of work, but has really well-developed flavor and is as close as you can get to a real classic soup. I used fresh broccoli for this, but you can use frozen as well. I wouldn't cook it quite as long as the potatoes/onions, though. Frozen tends to take less time. hands.matt -

Cheddar Broccoli Soup Cheddar Broccoli Soup
Our families FAVORITE broccoli soup! Kids love it and its great for a cold day or when your craving some comfort food.I made this in an attempt to recreat Panera Breads version. I think mine taste better because its fresh! & it lasts 7 days in fridge and it can be frozen as long as you dont add toppings to it and make sure its cooled before freezing.Enjoy :-D Jessaca Mattox -
Roasted broccoli and walnut soup Roasted broccoli and walnut soup
Our neighbour had too much broccoli and generously gave us three large heads. Now, I like broccoli as much as the next person, but that's a lot of broccoli. Rather than cooking it a bit at a time and risk having it spoil before we got through it all, and with the weather outside being miserable and rainy besides, I decided to turn the lot into a pot of comforting soup. For extra flavour, I added roasted garlic and walnuts to the mix. It was a pretty tasty solution to our broccoli overage. Robert Gonzal -

This rich and creamy Thai soup is flavorful; mild on the spice level and is very easy to prepare. It can be a perfect accompaniment to any meal or as a perfect light dinner meal on its own (add shrimp). Feel free to dial up the heat-spice level (Sriracha sauce) with a balance of added sweetness (guava syrup). Rick M -
