Peanut Butter Cookies

I didn't have the exact ingredients,I used Smooth Peanut Butter,Caster Sugar instead of Granulated Sugar - and instead of unsalted Peanuts that would have needed too be finely chopped,I used Walnuts - I broke them up with my Fingers,the Shop bought Peanut Butter is the Peanut element,have made these Peanut Butter Cookies before with the full ingredients,I got unsalted Peanuts from the Shop Waitrose.I made double the amount of Peanut Butter Cookies,the Walnuts (that were not fresh) amounted to about 100g when halved.The Calories for the ingredients I am about too mention amount to just over 4.000 calories and this is with Walnuts not Unsalted Peanuts,the Nut bits give a nice texture and a added Nut flavour.

Ingredients

  1. 125g/4 1/2 oz/ 1/2 cup butter,softened
  2. 150g/5 1/2 oz/ 1/2 cup chunky peanut butter
  3. 225g/8 oz/ 1 cup granulated sugar
  4. 1egg,lightly beaten
  5. 150g/5 1/2 oz/ 1 1/4 cup plain (all-purpose) flour
  6. 1/2 tspbaking powder
  7. pinchsalt
  8. 75g/2 3/4 oz unsalted natural peanuts,chopped

Cooking Instructions

    Lightly grease 2 baking trays (cookie sheets).

    In a large mixing bowl,beat together the butter and peanut butter.

    Gradually add the sugar and beat well.

  4. 4

    Add the beaten egg a little at a time until it is thoroughly combined.

    Sieve (strain) the flour,baking powder and salt into the peanut butter mixture.

    Add the peanuts and bring all of the ingredients together to form a soft dough.Wrap and leave to chill for about 30 minutes.

    Form the dough into 20 balls and place them on to the prepared baking trays (cookie sheets) about 5cm/2 inches apart to allow for spreading.Flatten them slightly with your hand.

    Bake in a preheated oven,190 oC/375 oF/Gas Mark 5,for 15 minutes until golden brown.Transfer the biscuits (cookies) to a wire rack and leave to cool.

For People on a calorie controlled diet of 3 Thousand Calories a day - the recipe ingredients amount to 3.700 calories,but there's nothing wrong in the odd bad day,these Cookies are nice with no sugar within cups of tea - just a bit of milk in the cup of tea,maybe.
