Cooking Instructions

Grate ginger and garlic, set aside. Cut meat of rolled shoulder into big chunks, brown from all sides in batches in the ghee, rendering down fat, remove meat from pan. Chop onions roughly soften them in the same pan, add the ginger and garlic, heat through, remove onions from pan. Add all the dried spices up to and including cayenne pepper. Heat until aromatic, do not fry or burn, remove from pan. Add with meat, water, bayleaf and tomato puree into slow cooker. Set on high.

Stir thoroughly and cook for at least 6 hours on high or until soft and tender but still in chunks. Mix together the joghurt with a few tablespoons of cooking liquid stir into the curry, then add garam masala. Cook for further 30 minutes on low heat, remove cinnamon sticks if using and the cloves.

Rogan josh is an spicy aromatic red curry of kashmiri origin. Traditionally the dish is cooked with mutton or lamb, you could however use any meat or vegetable you like. The long slow cooking required in this recipe is to make the lamb tender and draw as much flavour as possible out of the whole spices. Other meats or vegetables will not require this, if using beef i would still probably cook for a long time.I recommend you have your whole and powdered spices measured out and mixed together ready to throw in when required. I usually will have several small bowls with the spices for each different stage of the process ready to go. This recipe has three separate instances where spices are added. First is the tempering whole spices, second is the powdered spices added after browning meat and the third is at the end of the cooking process to season the dish.As always if you're missing a few spices don't worry about it, it will still taste delicious. There are also substitutions you could make like the mace blade can be replace with 1/2 tsp nutmeg powder. This is the authentic recipe of Michael Psilakis, Greek-American Chef. He taught me to make garlic confit. We self-butcher Dorper Meat Lambs in winter and freeze. Our lambs are big, a butterflied front leg is 3 pounds, the shoulder two pounds, enough for ten. The bones are used to make stew.I have included an easy way to butterfly your leg of lamb, all you need is a fork and steak knife.The meat tastes better when roasted whole. If it is too much food for one dinner, I roast ten minutes less, cut off the unused portions to freeze, then finish roasting. It freezes and reheats very well if meat is cut in one inch thick steaks. The leg makes 12 steaks of one inch thick, half a pound each, with stuffing.Warning.: this recipe overcooks very easily, from medium rare to well done in minutes. Use a probe thermometer.
