Apple and date muffins

Developed from a very delicious apple and date cake I used to make, but this being an easier recipe to throw together.
These can be eaten hot, cold, by themselves, or even with cream!

And they're fairly low in sugar compared to your typical muffin recipe, but you defo wouldn't notice. The dates add their own 'sticky toffee' sweetness, and I'm happy for my kids to munch away on them.

Ingredients

20 minutes
12 muffins
  1. the dry
  2. 210 gplain flour
  3. 75 gsugar
  4. 1 tspBaking powder
  5. Pinchfine salt
  6. the wet
  7. 1egg
  8. 75 mlmilk
  9. 75 mloil
  10. the fruit
  11. 2apples, peeled, cored, chopped
  12. 1 cupdates
  13. 75 mlboiling water
  14. 1 tspbicarbonate soda (baking soda)

Cooking Instructions

    Begin by adding destoned and chopped (or roughly torn) dates and the apples together with the boiling water and bicarb. Let sit and allow to cool. You can leave this to soak for an hour or so especially if you're dates are quite dry.

    Measure dry ingredients into a large mixing bowl. Whisk together by hand to get some air into it.

    Measure wet ingredients in jug and roughly beat egg into the milk and oil.

    Finally, dump all three mixtures together and stir with a spoon till fairly well combined.

    Spoon into a lined muffin tray and bake in preheated fan oven at 180°c for about 20 minutes. They should look well risen and caramel brown when done.

    Serve warm, or cold. As a snack by itself or even as a dessert with custard or cream out ice cream!
