Pistachio Mooncakes 🥮 Pistachio Mooncakes 🥮
These are very popular Chinese pastries, especially enjoyed during the Mid-Autumn Festival, which usually takes place in mid-September. This festival celebrates the harvest and is also linked to the legend of moon watching, which is why these pastries are called mooncakes. They look similar to Middle Eastern maamoul cookies made for Eid, and even use the same mold, but the dough is much thinner and the filling is thicker. The filling can vary from sweet bean paste to nuts, or traditional Chinese fillings like lotus seed paste or salted egg yolk. In this recipe, I used a pistachio and rose water filling. 🦋 FarFalla 🦋Translated from Cookpad Egypt -

Colorful Cajun rice Colorful Cajun rice
#Win #Week9 #Jan #W3Couple of years ago, I gave a lecture at the University of Louisiana. New Orleans. Cajun is an ethnic group in French speaking Louisiana. Louisiana cuisine is almost like our hometown cuisine. Recipes include rice, spices, hot chili peppers. We dines at the very popular chef Emeril Lagassi ‘s restaurant. He made Cajun rice for us without the meat. Aromatic flavorful spicy hot rice with lots of vegetables. We loved it. For the first time I cooked it in my very own kitchen. time. A fusion recipe with Indian flavor. Instead of parsley I added coriander. Cajun rice is also popularly knows as dirty rice as the meat and fishy sauce included give the rice a dirty brown color. My recipe is not dirty; I didn't add meat or fish sauce. This is the vegetarian version of Cajun dirty rice Lakshmi Sridharan Ph D
