My Special Maamoul with Dates

To prepare the dough, combine the semolina, butter, ghee, sugar, and mahlab mixed with orange blossom water and rose water.

Rub the ingredients together well until the semolina absorbs all the fats. Knead the dough every hour or two until it becomes soft and pliable.

Let the dough rest overnight.

The next day, add the yeast to the dough and let it rest for 1 hour. Then knead it with orange blossom water and rose water (about 1 small cup of each).

Prepare the filling by shaping the dates into small balls to use as filling for the maamoul.

Shape the dough as desired, fill with the date balls, and place on a baking sheet. Bake in a preheated oven at 350°F (180°C) until golden and cooked through.

Dust with powdered sugar as desired and enjoy.
