Lotus Root Dumplings with Ankake Sauce
My mother taught me this recipe, but I used shiitake mushrooms instead of shrimp so that vegetarians could eat it too, and I also omitted the egg white in the original recipe. This is the sister recipe of "Lotus root dumplings (in clear soup)".The key is to put just a little bit of grated ginger (including the juice), but if you use too much, it will be too strong so watch out (you can use grated ginger from a tube). After you have grated most of the lotus root, chop up the last little bit left and add it too.I used the Step 7 dumplings in a clear soup in. Mitarashi (Sweet Soy Sauce) Syrup for Dango Dumplings
I made this for the birthday party of a friend who loves sweets.I wanted to make the very best for my friend. This recipe is the result of a few hours of carefully adjusting and making notes about the flavoring ingredients!Be sure to add the katakuriko dissolved in water a little at a time, until it reaches the desired consistency. The leftover syrup is good for potato mochi too!If you use only shiratamako, these will stick to the pan when you brown them, but if you add dumpling flour as well, they won't stick. Pan-Fried Dumplings with Chive Dipping Sauce
I once tried a Korean dish where chives were finely chopped and mixed with a Korean sauce as a part of the dipping sauce. It was quite interesting, almost like a simple kimchi, and it paired well with the rich Korean BBQ, cutting through the greasiness. This time, I decided to chop up some chives and mix them with my favorite dipping sauce to pair with quick pan-fried dumplings. It turned out to be really delicious.

All-Purpose Wasabi Mayo Sauce Great with Gyoza Dumplings
Originally, I made it with mentsuyu and mayonnaise. I just added wasabi and it was delicious. I added black pepper and garlic to go well with deep-fried food, and I arrived at this delicious sauce. It's surprisingly tasty to eat gyoza dumplings with it! I recommend this sauce especially to mayonnaise lovers.Since I used concentrated mentsuyu, it has a strong taste. If you like light flavour, add a little bit of water to thin it. Recipe by Yu-hi

This Goes So Well With Beer! No-Sauce Needed Kimchi Gyoza Dumplings
I had some leftover kimchi, plus I didn't want to bother with chopping up and salt-massaging cabbage!Squeeze out the kimchi very well or the gyoza dumplings will be watery. The mayonnaise is used as a binder for the filling instead of egg.The cheese adds mildness and richness to the filling.Cook the 'wings' on the dumplings until they are crispy. Recipe by ma2003co

Sweet Soy Sauce Minced Pork
#mycookbookI am a porridge ‘super’ big fan since I was a kid. My mom always cooked me plain porridge with different kinds of side dishes at least 2-3 times a month. This Sweet Soy Sauce Minced Pork is one of the ‘must’ menus every time she made porridge. It doesn’t use a lot of various ingredients but it’s very flavorful 😋😋😋 If you like my recipes, please follow my Instagram @jenscookingdiary for the Indonesian recipes or @jenscookdineandtravel for the English recipes 🙏🏻😊😘

Roast pork with blueberry balsamic sauce and pistachio gremolata
Sunday dinner was pork roast, but I didn't feel like making just any ol' pork roast. My wife recently brought home a jar of chunky blueberry jam, and it occured to me that it, along with a bit of aged sweet balsamic, would make a wonderful sauce that'd not only be tasty, but a nice break from the usual apple. To jazz things up even more, I whipped up a super-easy gremolata with a handful of roasty pistachios mixed in. It was crunchy and bright and fresh, and worked perfectly with the meaty pork and tangy sauce. All-in-all, with only minimal extra effort, it turned out to be a pretty great Sunday dinner.

Soy Sauce Broth Ramen
It's been 4 years since I started making homemade ramen as a hobby. Recently, I've finally been able to come close to my ideal flavors, so I uploaded the recipe here as a note to myself. The noodles here are low in moisture and very hard. I think they would be very hard to roll out without a pasta machine or noodle-making machine. If you are going to roll them out by hand, add 100 to 200 g of water to the amounts given. That is the ratio I used to use when I used to roll my noodles out by hand. Recipe by Homard Ebiko

Pork Belly, Chinese Chives, and Bean Sprouts with Sauce
When I stir-fry bean sprouts, they always release a lot of moisture, which is why I thought it'd be a good idea to thicken it. I added some flavor and katakuriko to make a thick sauce.Since the katakuriko will sink to the bottom of the ○ ingredients, make sure to mix it up again before you add it to the frying pan.
