Red Cabbage Modak (Red Cabbage, Coconut and mixed nuts)

This Delicious Modak is with the goodness of Red cabbage ( also called Purple cabbage), mixed nuts and coconut.
This is not overly sweet, it has the right sweetness.
If you like very sweet Modak you can add more condensed milk or sugar or jaggery.
Cooking Instructions

Finely grate or chop the red cabbage, heat enough water to boil the cabbage. Once water boils add the cabbage, cover & cook for about 5 minutes or so. Drain and let it cool to room temperature. Don't throw away the boiled water, use the water as needed to help the cabbage to grind. Once cooled grind it into a fine paste/ puree.

Meanwhile, the cabbage cools, finely chop the nuts manually or with chopper. Heat 1 Tsp of ghee and roast the nuts for about 5 minutes add the dessicated coconut too and roast for a minute or two, keep aside. Now heat 2 Tsps of ghee and add the red cabbage paste/ puree and cook it till water reduce and it almost becomes 50%, it may take about 15 minutes in a wide pan. Add a pinch of salt too. Then add the condensed milk and cook till it starts forming a lump, it will take around 25-30 minutes.

Add in the nutmeg & Cardamom powder and the roasted nuts and coconut and mix well and cook for another 5 minutes or so till it forms a lump or looks like a dough. Once done put it on a plate to cool. Once cooled put it in a Modak mold and shape it. Close the Modak mold and feed into it. Once full open and keep it on a plate. In this way make Modak of the whole dough. Put edible silver leaf & offer it to Lord Ganesha!

Note :
1. If you don't have a Modak mold simply shape it with your hand in round conical shape and make impression with a toothpick.
2. The quantity of Modak depends upon the size of the your molds, if you have smaller mini moulds, you can make many, my mould is approx 1.5 cm by 2.5 cm (closed), so I could make 10 Modaks only.
