Minestrone with celery and pork belly

Ingredients

  1. 100 gpork belly or smoked pork belly
  2. 2celery stalks
  3. 2medium tomatoes
  4. 1.5chicken soup stock cube
  5. 600 mlwater
  6. 2 tbspolive oil
  7. Oregano (optional)

Cooking Instructions

  1. 1

    Cut the pork belly, celery and tomatoes into bite-size pieces.

  2. 2

    Heat a pan, add olive oil and fry the pork belly.

  3. 3

    When the pork belly is about 60% cooked, add the celery.

  4. 4

    When the celery is slightly cooked, add the tomatoes and fry until the tomatoes break down a little.

  5. 5

    Add water and soup stock.

  6. 6

    When warm, it's ready!
    Add salt if necessary.
    Tastes great with oregano or other herbs if you like.
