Ingredients

  1. 100% Flour
  2. 60-80% water
  3. 20% sourdough starter
  4. 2% salt

Cooking Instructions

  1. 1

    Autolyse everything except salt

  2. 2

    Rest 1 hour

  3. 3

    Add salt then rest 4-5 hours (Bulk Ferment)

  4. 4

    Shape and place in banneton

  5. 5

    Rest room temp 2 hours or refrigerate overnight

  6. 6

    Score preferred design then bake 250 degrees 20mins with steam or covered

  7. 7

    Then bake 20 mins uncovered or with no steam
