Ingredients

8 hrs for soaking & boiling+ 15 mins cooking
4 people
  1. 1/4 cupred kidney beans 🫘 soaked and boiled
  2. 3/4 tsppaprika powder 🌶️
  3. 2medium size onions 🧅 cut into rings
  4. 3 tbspfresh celery finely chopped 🌱
  5. 2 tbspfresh dill finely chopped 🌱
  6. 1medium size carrot 🥕grated or ribbons
  7. 1/2cucumber 🥒 diced in small cubes -(seeds removed)
  8. 1yellow scotch chilli or 2 finely chopped green chillies (remove seeds from both chillies)
  9. 1 tspfinely chopped garlic 🧄
  10. 2 tbspoil for saute
  11. Salt to taste 🧂
  12. For dressing:
  13. 3 tbspextra virgin olive oil
  14. 1/2lemon freshly 🍋 squeezed
  15. 1/2 tspblack pepper powder

Cooking Instructions

8 hrs for soaking & boiling+ 15 mins cooking

    Wash and clean the red kidney beans and soak them for 7 hrs, boil them till tender, remove from heat and keep aside. Note: {the boiling time will be under 1 hr and depending of the hardness of the beans}. In a pan add oil, when heat add finely chopped garlic 🧄, cook till light brown and add boiled red kidney beans 🫘 and saute for 5 mins, add salt 🧂 and paprika powder 🌶️ and mix well, remove from the oven and let them cool completely.

    In large bowl, add sauted red kidney beans 🫘, onion rings 🧅, fresh chopped celery & dill 🌱, finely chopped scotch chilli or green chillies, cucumber 🥒diced, carrot 🥕 ribbons/ grated mix all together gently and keep aside till serving time.

    For dressing: in a small bowl add extra virgin olive oil, lemon juice 🍋 and black pepper powder mix together and pour on the salad, mix gently and serve immediately with plain rice, toasted bread slices and etc.
