Tagliolini simple Bolognese

Have always made a Bolognese Sauce with the use of Tin Tomatoes along with the tomato juice inside . The idea of adding Celery and Carrots , plus combining a tin Chopped Tomatoes with a tin Plum Tomatoes comes from a recent (2024) episode of One of Jamie Oliver's TV Cookery Shows . Is real Beef mince in a Bolognese , could use Lamb mince instead

Ingredients

  1. 2 tbsp.Olive Oil
  2. 2large Brown Onions
  3. 2 sticks Celery
  4. 1 large raw Carrot
  5. 4 cloves Garlic
  6. 250g frozen Beef mince
  7. 400g tin Chopped Tomatoes
  8. 400g tin Plum Tomatoes
  9. 4 tbsp. Tomato Ketchup Sauce
  10. 1 tsp. Salt
  11. Half tsp. Ground Black Peppercorns or Black Pepper
  12. 2 large Hen eggs (beaten)
  13. 200g Plain Flour
  14. 2 small pinches salt
  15. 2 tsp. Measurement Spoon of Cold water
  16. Cold water too fill a very large Cauldron Saucepan

Cooking Instructions

    Very first thing too do is put a large amount of Cold tap water into a very large Cauldron saucepan - water in - close to the top of the large Saucepan and then bring too the boil - takes roughly about 15 minutes to get boiling hot. Then immediately make the homemade raw Pasta ball

    Crack 2 large Hen eggs into your Kenwood Food Mixing Bowl and then add the large Kenwood Whisk Attachment and then briefly whisk the eggs together and then add the 200g Plain Flour over the top and then add the 2 pinches salt and then add the 2 tsp. Cold water and then add the Kenwood Dough Hook Attachment and then eventually turn Kenwood Mixing Machine up too full speed and then use your Hands too bring it together into a ball and then wrap in Clingfilm and then place in the Freezer for 20 min.

    Next step is to immediately fry chopped onions in Olive Oil for 10 minutes mainly on the lowest hob heat, adding finely chopped Celery during those 10 minutes and adding thin sliced raw Carrots or very small dices carrot, add thinly sliced peeled garlic cloves

    Fry off the Beef Mince for 10 minutes on the highest hob heat and keep stirring with a Wooden Spoon - could shallow fry the Beef Mince separately in another Frying Pan or fry it along with the onions, celery and carrot, plus garlic

    With 10 minutes left of cooking time add the tin's of Tomatoes along with it's Tomato Juice and then add the Tomato Ketchup Sauce or Tomato Puree and Tomato Ketchup Sauce, add salt and Black pepper and then cook through mainly on the lowest hob heat. Stir occasionally

    Immediately take your fresh raw ball of Pasta out of the Freezer, remove Clingfilm and then cut into 4 equal halve's, dust some Plain Flour over the top and then flatten with your Hand so you can fit the flattened raw Pasta through the Zero dial of your Kenwood and then pass through the Zero - 3 times, mending the crumbly bits and then pass through the One dial on Kenwood full speed and then through 2 and then finally 3. Place the 4 Lasagne Sheets on a flat clean surface

    Connect Tagliolini Kenwood Pasta strand Attachment too your Kenwood Food Mixer Machine and then turn on full speed - catch the raw Pasta strands underneath - preferably holding a large metal Mixing Bowl underneath - and then as soon as possible, gently place into boiling water and then they should be done in 5 minutes, unless you want them aldente

    Add 2 Ladles of hot boiling Pasta water too the cooked Bolognese and then add all the drained cooked Pasta strands too the Bolognese, work most of it into the Bolognese and the rest of the cooked Pasta strands over the top. Very nice with grated Parmesan Cheese over the top if you can afford it, or Asda UK sells the cheaper Hard Cheese block similar to the block of Parmesan
