I like how you can switch the veggies around based on your preferences. As long as you slice the veggies in thin 2-3 inch pieces, layer and cover with leafy greens, anything goes! This is my fave combination. What's yours?

Cooking Instructions

In a shallow but wide brimmed bowl pour warm water. Submit one rice roll wrap into the water until it is a bit gooey. Make sure it isn't too soft because it's hard to work with. It softens as you put the veggies on.

Take the wrap out of the water and carefully place on a flat and smooth dish. Lay a bed of greens in the center of the wrap.

On top of the greens, line 1/2 of the slices of cucumber parallel to 1/2 of the broccoli slaw, avocado, and bean sprouts. Add another layer of greens on top of the veggies.

NOTE: You should roll the wrap horizontally to the lined up veggies. (From the sides of the tubes of veggies versus the top/bottom of the tubes).

Once all of the veggies have been added to the wrap, roll the wrap half way. While holding onto the wrap with one hand, fold the sides of the rice wrap up and towards the center of the vegetables (these sides are on the top and bottom of the tubes)

Continue to roll horizontally, including the sides within the roll.

Repeat the process for the second rice wrap. Let wraps dry for a minute, cut in half (optional) and enjoy with peanut sauce.

A healthy-ish spin on the chow mein we all love from asian restaurants. Some of the noodles are just replaced with ALL the vegetables. This is best prepared in a wok, but if you cook with a electric stove a large sautee pan with high sides will do. I use dried noodles called "Wok Nudeln" here in Germany. I never saw the equivalent in the states, but then again I wasn't looking. It will work with any asian egg noodle, however. You will just skip adding water to the pan when cooking the noodles. If you're lucky enough to have access to fresh noodles, you don't need to do anything extra. If you're using the longer noodles that come kinda like blocks you should blanch them just until they separate. Remove from heat and toss with sesame oil. Stirfry seems simple, but it can be really tricky. I have been making stirfries my entire life and just haven't been able to get it right... Until recently. Every single time I had cooked a homemade stirfry, I would end up with a soupy mess. Vegetable sweat=not pleasant. Even cooking the vegetables to perfection is an art. There is nothing worse than a chowmein with vegetables that have been completely obliterated! The keys to making this method work are stirfrying the vegetables separately, working quickly, always cooking on high and adding a flavorful sauce at the very end. Do not, I repeat, DO NOT cook everything together in an effort to simplify the recipe. Trust me. You won't regret using the extra dishes.Feel free to use the vegetables of your choice. I have been making this for years. But I used to buy the chow Mein packet mix. I thought 'how hard could it be to make it myself?'. The answer is 'really easy!'. It's basically oyster & soy sauce, ground cumin & coriander, throw in some chicken and veggies of your choice and some noodles. That's about it! So nice and a good way to get rid of those veggies that need to be used. Ground beef instead of chicken pieces works well too. Enjoy! 😀 ChrisO505 -

This is a quick stir fry recipe that makes a great lunch or lighter dinner. You could add some protein of your choice to it to make it more hearty, but I enjoy it with just the veggies.
