Loaded Mashed Potatoes

I love using my rice cooker for making a one bowl mashed potatoes. All the flavors blend together beautifully leaving me able to finish the rest of the meal. If you want to serve this with children in the house, just omit the wine. You'll still enjoy this wonderful mash.

Cooking Instructions
- 1
Peel and clean your russet potatoes.
- 2
Chop them into medium chunks.
- 3
Add them to your stock pot. I use a rice cooker.
- 4
Peel and crush your garlic. Add them on top of potatoes.
- 5
Top that with parsley then baby carrots.
- 6
Add your wine then chicken broth.
- 7
In cooker, close lid, let cook for twenty minutes or until potatoes and carrots are tender. In stock pot, bring to a boil then simmer covered for same time. Just until tender.
- 8
I keep the cooking liquids when mashing. You can use them too or drain. Also you may leave in garlic or remove. I leave it in.
- 9
Add your butter, sour cream, salt and pepper. Mash with hand masher or through ricer. See what consistency the mash is. If you need extra creaminess you may add some splashes of heavy cream until desired creaminess and texture is achieved.
- 10
Serve hot and enjoy!

Why use store bought mashed potatoes when you can make your own with 3 basic ingredients? It's fast, easy and delicious !Note: Milk should be added in intervals to avoid making runny mashed potatoes. Consider adding a little extra milk at the end since some of it will evaporate as the mash potatoes cool down. Veggie K -

After trying many flavors, this became a favorite in our household. After the potatoes have boiled, perform Steps 2 and 3 quickly. Doing everything while they're still hot will change the smoothness of the potatoes. They will taste even better if you mix until the potatoes become plump and glossy.
