‘Broccoli Slaw’ is my new discovery at a Coles supermarket. It was packed with creamy dressing and $5 for about 2 servings. I liked it a lot, but the list of ingredients freaked me out, and also it is pricey! Coleslaw can be made easily and cheaply at home. You don’t need to buy the broccoli slaw mix. And my 'Creamy Dressing' is quite tasty. Why don’t you try it?

Ingredients

4 servings
  1. 1Broccoli *select one with longer and thicker stalk
  2. 1Carrot
  3. 1-2Red Cabbage Leaves
  4. Nuts or Seeds for topping
  5. <Creamy Dressing>
  6. 4 tablespoonsJapanese Mayonnaise
  7. 2 tablespoonsGreek Style Yoghurt
  8. 1 teaspoonGarlic Powder
  9. 1 teaspoonSugar
  10. 2 teaspoonsRice Vinegar
  11. 1/2 teaspoonSalt
  12. 1/4 teaspoonBlack Pepper

Cooking Instructions

    The stalks (stems) of the Broccoli are the main ingredient. I recommend to cut off the dark green parts, using a small knife, into very small florets. Remove the very wooden parts of the thick stalk. Then slice into thin strips. Using a vegetable slicer is the easiest way.

    Slice Carrot and Red Cabbage Leaves into thin strips as well.

    In a small bowl, mix all the ingredients to make Creamy Dressing, then combine with vegetables. Sprinkle with Nuts or Seeds for your choice. This time, I used Pumpkin Seeds. Serve immediately or allow to rest for 1/2 hour before serve.
