My friend and I have always loved cucumber and cream cheese sandwiches. We needed something new, so we found a recipe from one of my mom's cookbooks.The dill weed is optional; it adds a good flavor, but it is super flavorful without it, too.I like to make a double batch of this and make them for my work lunches.Whipped cream cheese is easier to blend with the other ingredients. But I take my cream cheese brick out and let it soften while I get everything else together.

When I was in high school, there was a bakery near the school that sold cucumber *only* sandwiches. They were cheap, so I bought them with my allowance. They were perfectly seasoned with salt, and delicious, and have remained in my memories.I thought back to those sandwiches, used my favorite yogurt sauce, and made my own variation.To prevent the sandwiches from becoming watery, be sure to squeeze out the salt-massaged cucumbers very well to remove excess moisture.
